I'm Baaaack!

Hello!?!

Echo! LOL

I know, I don't have any followers. Who would want to follow an almost-empty blog account. It's been ages since I blogged but I am back with a vengeance!

I have been busy with my day job and other sideline business. Basically I don't have any blog-worthy events. But right now, I think I have a lot to blog about especially now that I am baking non-stop. Watch out for my blogs about my kitchen adventures.

In the meantime, here are some of the cupcakes and cakes I created recently.

Vanilla Cupcake Victory



I love vanilla. I love the taste and smell of vanilla. Which is why I love Billy Reece's Vanilla Cupcake recipe. I have bake at lot of vanilla cupcakes; almost at a thousand, I think, since December 2008.

Here's the recipe. Copied the recipe from 52cupcakes.blogspot.com:

Billy's Vanilla, Vanilla Cupcakes

Makes about 30 cupcakes
1 3/4 cups cake flour, not self-rising
1 1/4 cups unbleached all-purpose flour
2 cups sugar
1 tablespoon baking powder
3/4 teaspoon salt
1 cup (2 sticks) unsalted butter, cut into 1-inch cubes
4 large eggs
1 cup whole milk
1 teaspoon pure vanilla extract

1. Preheat oven to 325°. Line cupcake pans with paper liners; set aside. In the bowl of an electric mixer fitted with the paddle attachment, combine flours, sugar, baking powder, and salt; mix on low speed until combined. Add butter, mixing until just coated with flour.

2. In a large glass measuring cup, whisk together eggs, milk, and vanilla. With mixer on medium speed, add wet ingredients in 3 parts, scraping down sides of bowl before each addition; beat until ingredients are incorporated but do not overbeat.

3. Divide batter evenly among liners, filling about two-thirds full. Bake, rotating pan halfway through, until a cake tester inserted in the center comes out clean, 17 to 20 minutes.

4. Transfer to a wire rack to cool completely. Repeat process with remaining batter. Once cupcakes have cooled, use a small offset spatula to frost tops of each cupcake. Decorate with sprinkles, if desired. Serve at room temperature.

Billy's Vanilla Buttercream

Colored sprinkles, for decorating (optional)
Makes enough for 30 cupcakes

1 cup (2 sticks) unsalted butter, room temperature
6 to 8 cups confectioners' sugar
1/2 cup milk
1 teaspoon pure vanilla extract

1. In the bowl of an electric mixer fitted with the paddle attachment, cream butter until smooth and creamy, 2 to 3 minutes. With mixer on low speed, add 6 cups sugar, milk, and vanilla; mix until light and fluffy. If necessary, gradually add remaining 2 cups sugar to reach desired consistency.

Chocolate Cupcake Conundrum

For months now I have been trying to find the perfect chocolate cupcake recipe. I have tried using cocoa powder and semi-sweet baking chocolate to create a perfect batch of chocolate cupcakes. I am constantly researching to find the elusive recipe.

I wanted to make my chocolate cupcakes like the Billy Reese's Vanilla cupcake texture. I don't like the spongy type, I want to bake a moist and dense chocolate cupcake.

The last chocolate cupcake recipe I tried is Billy Reese's Chocolate cupcake. I followed the instruction or tried to, and it overflowed and after I took it out of the oven, it collapsed. I am a novice in baking and all the knowledge I have in baking was harnessed in food magazines and through the internet.

I will try the Hershey's Chocolate Cupcake Recipe and Nigella's Old Fashion Chocolate Cake next. Wish me luck and I hope I get it right the next time.

New Year, New Blog

I think I created a blog here a few years back but I deleted it. So, here I am, starting from scratch but with a new purpose. I have been obsessed with baking lately. It started last December 2008, and contemplating what cake to serve on my son's 2nd birthday party. I wanted something new and not the usual cake for a kid's birthday party. I was surfing the net and I saw some cake ideas, some I really liked. I decided to serve cupcakes. I haven't baked for more than 3 years. I went to Cebu last September 2004 and my baking have been the least of my priority. Then I got pregnant and gave birth to a beautiful son last January 5, 2007 and baking have not entered my mind.

But I am back and more obsessed with baking than before. I will post my baking triumph and disasters soon.
